Food Matters CE Course is an evidence-based, experiential-learning, applied nutrition, and culinary skills course for health professionals of all disciplines. The course addresses the role of food in specific health conditions and its function in health promotion and disease prevention. The relationship between the source or our food, and the larger food system to both environmental and human health will be discussed. Learning methods include hands-on cooking, experiential learning activities, patient education resources, and case-based discussions. The course provides practical application of these food and nutrition principles to self-care and patient care for health professionals in an interprofessional, collaborative environment.


Key Topic Highlights: Macronutrients (fat, protein, carbohydrate) quality & balance, popular dietary patterns (Mediterranean, Paleo, Vegan/Vegetarian, gluten free, keto, intermittent fasting), foundational concepts regarding the gut microbiome, culinary techniques, flavor profiles, mindful and sustainable eating, social determinants of health and food justice.



Objectives
At the conclusion of this course, learners should be able to:

  1. Describe the role food plays in health, disease prevention, self-care, and wellbeing and use hands-on cooking skills to apply this knowledge..
  2. Utilize basic concepts of food-based nutrition and food-systems awareness in patient care and population health practices.
  3. Demonstrate confidence in implementing food-related self-care practices and mindfulness to support provider well-being.

Registration

Sliding Scale Pricing

The Earl E. Bakken Center for Spirituality & Healing is deeply committed to the wellbeing and flourishing of all communities. In order to make our programming accessible to a broader audience, we have implemented a sliding scale fee structure. The suggested registration fee for this program is $399 if you register at least one month in advance or $449 after that. We also offer a scholarship rate and a supporter rate for those who would like to contribute toward making this programming accessible.

Regular Rate: $399 if you register by May 1, 2023
$449 if you register on or after May 2, 2023

Supporter Rate: $499 if you register by May 1, 2023
$549 if you register on or after May 2, 2023

Scholarship Rate:            $299 if you register by May 1, 2023
$349 if you register on or after May 2, 2023

Registration will close at noon on June 1, 2023, or when course capacity is reached.

Cost of registration does not include food and equipment for cooking activities.


Accreditation
In support of improving patient care, University of Minnesota, Interprofessional Continuing Education is jointly accredited by the Accreditation Council for Continuing Medical Education (ACCME), the Accreditation Council for Pharmacy Education (ACPE), and the American Nurses Credentialing Center (ANCC) to provide continuing education for the healthcare team.

Credit Designation Statements

American Medical Association (AMA)
The University of Minnesota, Interprofessional Continuing Education designates this live activity for a maximum of 8.5 AMA PRA Category 1 Credits™. Physicians should claim only the credit commensurate with the extent of their participation in the activity.  

American Nurses Credentialing Center (ANCC)
This activity is awarded up to 8.5 ANCC contact hours.

National Board for Health & Wellness Coaching (NBHWC)
This course is approved by the National Board for Health & WellnessCoaching for 8.5 continuing education units (CEA-000171-1).
Questions regarding NBHWC CEUs should be directed to the Bakken Center, [email protected]. OCPD is not the provider of the NBHWC credit offered for this course.

MN Board of Dietetics and Nutrition Practice
An application has been submitted to the MN Board of Dietetics and Nutrition Practice for consideration of continuing education approval. Determination of credit is pending review. 

Other Healthcare Professionals
Other healthcare professionals who participate in this CE activity may submit their statement of participation to their appropriate accrediting organizations or state boards for consideration of credit. The participant is responsible for determining whether this activity meets the requirements for acceptable continuing education.

Cancellation Policy:
In the event you need to cancel your registration, the registration fee, less a $50 administrative fee, will be refunded if you notify us by 4:30 p.m. Central Time two weeks prior to the start of the conference. No refunds will be made after this date.
